Currently holds the Title of F&B Manager for minimum of 5 years in department, min 3 years in Managerial position, in a large (350 roomed) HOTEL, Including banqueting, bar, resstaurant and all F&B outlets
According to Hotel’s BBEE quota:
Priority African Female. Second coloured Female and Third African Male. Max Salary 50k.

• To be responsible for the overall management and running of the Food and Beverage Department, including by not limited to restaurants, bars, in-room dining, conferencing and banqueting.
• Achievement of budgeted sales and profit targets.
• To ensure that the standards as laid down by the company policies and procedures are implemented & adhered to, in order to achieve the highest revenue and conversion of in-house guests while ensuring food and beverage cost of sales remain in line with the budget.
• To provide the best possible standard in service to all guests, owners and tenants.
• To lead the F&B team towards meeting and exceeding the requirements of the establishment.
MINIMUM REQUIREMENTS:
• Minimum Grade 12 (Matric).
• Recognized 3-year tertiary qualification in the Hospitality industry will be an advantage.
• At least 5 years’ experience in the F&B department of which at least 2 years should have been in a managerial position.
• Exceptionally fluent in English.
• High Level of computer literacy with emphasis on Microsoft Office, Nebula and SCS. Basic knowledge
of INFOR is an advantage.
• Well-developed leadership, training and communication skills.
• Good business acumen with competent financial understanding including stock takes, menu design and pricing.
• Well-developed negotiation skills.
• Well-developed administration and analytical skills & attention to detail.
• Ability to create a strong team climate and proven track record of leading a team of a minimum of 10 direct reports.
• Ability to work shifts and occasional overtime.
• Ability to perform under pressure and consistently meet the requirements of the position.
• Own transport.
• Preference will be given to applicants with experience in a whole ownership / Hotel property.
• Knowledge of relevant legislation relating to F&B Management including industrial relations.
KEY RESPONSIBILITIES:
• Achieves budgeted revenues including conceptualization, promotions, managing expenses and maximizes profitability related to the food and beverage department.
• To ensure compliance with relevant health and liquor laws.
• Oversee the smooth running of and take operational responsibility for all aspects of the F&B department.
• Manage employee rosters to ensure the correct level of coverage.
• Implement and maintain departmental handover procedures.
• Ensure strict control over all procedures involving cash, billing, food and beverage quality, service excellence and record keeping.
• Excellent problem-solving and decision-making skills.
• Review departmental performance against the objectives set.
• Take charge of all aspects of selection, training and performance management.
• Assist with and drive maximizing of patrons, including conversion of in-house guests.
• Ensure overall guest/group satisfaction through meeting special guest requests and exceeding guest expectations.
• Effective complaint handling.
• Flexibility and creativity in terms of events and promotions.
• To maintain a high standard of personal service with all customers, internal and external as well as public areas surpassing those as set out by the Group
• To manage & control daily revenues and to report any deviations and irregularities to revenue to the Deputy General Manager and rectify accordingly.
• To be fully aware of the trends in the industry and make suggestions for the improvement of the running of the F&B department.
• Ensure compliance with both internal and external audit requirements.
• Creativity in menu and promotion design.
• Update menu and wine lists when required.
• Monitor and update all selling prices throughout the F&B department.
• Knowledge of F&B costings.
• Good planning skills and executing events accordingly.
• Building a good rapport with marketing, suppliers and colleagues, especially the Executive Chef.
• Represent the department in management meetings.
• Assist with the formulation of the departmental budget and financial reporting.
